From Pop-Up Dreams to Brick and Mortar Success

The story behind Copper Kings Burgers reads like a pandemic success tale done right. Dermot, originally from Belfast, Ireland, and Jon, from Lawrence, Kansas, met while working in San Diego’s bar scene. When COVID hit, and they lost their jobs, they decided to bet on themselves. Early mornings in a shared Oceanside commissary kitchen turned into late nights serving burgers at breweries and wineries throughout North County.

What started as a mobile operation quickly gained a devoted following. Today, Copper Kings operates from their San Marcos restaurant at 925 W San Marcos Blvd, serves at coastal pop-ups, and just announced they’re opening a second location in Oceanside in early 2026.

What Makes These Burgers Stand Out

The secret is in the details. Copper Kings grinds their beef blends in-house, ensuring every patty meets their exacting standards. Those signature Japanese-style milk buns? Made by their baker on staff, who also creates cakes, scones, and dessert bars for customers who order 72 hours in advance. Even the sauces and dips are made from scratch.

Popular menu items include the Spicy Burger, Western Burger, and Classic Burger, each featuring perfectly smashed patties with a beautiful crust. The Confused Treehugger brings pickled chilis and tarragon aioli together in an unexpected flavor combination. Their Reuben burger has become such a hit during special appearances that regulars constantly ask when it will return.

Real Value for Quality Ingredients

While prices reflect the quality ingredients and house-made components, reviews consistently mention the value for what you’re getting. Sides are ordered separately, so plan accordingly, but the portions and taste justify the investment. The fries? Crispy, well-seasoned, and generous. During busy times, expect a 35 to 45 minute wait from order to table, but the QR code ordering system keeps things moving smoothly.

Happy hour runs Monday through Friday from 3 to 6 pm, featuring $5 select beers, $2 off draft beers, and the $10 “McDon’t” burger with fries for dine-in guests. Speaking of drinks, their 12-beer tap list includes local favorites plus nitro options like Guinness and Kilkenny.

Hours and How to Visit

The restaurant welcomes guests Sunday through Thursday from 11 am to 8:30 pm and Friday through Saturday from 11 am to 9:30 pm. Parking can get tight during peak hours, but designated spots behind the building offer relief. You can also catch them at their coastal pop-up at The Shanty in Cardiff-by-the-Sea every other Friday from 4:30 to 8:30 pm.
